Date Truffle Recipe

So I was thinking, a nice simple post would be a good idea for my first blog post! I hosted a Chakra & Yoga workshop on Sunday June 28th and wanted to make some healthy treats for the students. Based on various recipes I found on the internet I created some lovely simple and gooey date truffles to keep our energy levels up!

Here’s the Recipe!

  1. 2 cups pitted dates, coarsely chopped
  2. 1 cup boiling water
(Put the dates into a bowl: pour the water over + let them sit for 10 minutes)
  3. 1 cup ground almonds (or any other nut you like — hazelnut is nice)
  4. 2 tablespoons coconut oil, melted
  5. Pinch of sea salt and dash of vanilla extract
  6. 3 tablespoons unsweetened cocoa powder
  7. 3/4 cup desiccated coconut —
+ poor some extra desiccated coconut out onto a plate or tray for coating the truffles

Process: Empty the bowl of dates (including the water) into a blender, add the almonds, coconut oil, cocoa powder, salt + vanilla and coconut and whizz until the mixture looks smooth (a few lumps of dates is no bad thing :)). It will be quite gooey now — take a tablespoon sized scoop of the mixture and roll it around in the coconut, pop on another plate, repeat for the rest of the mixture and stick the truffles in the fridge for 2 hours to set.

To relate this to the Chakras — there are herbs and spices that relate to each chakra — So if you want to add a pinch of cinnamon — this would stimulate the Solar plexus and Heart chakra.

Enjoy!
